Why the demand is structural, not seasonal

Canada's food service sector has grown faster than its domestic culinary workforce for a decade. Tourism regions add seasonal spikes on top of the baseline shortage, and institutional kitchens — hospitals, camps, senior residences — compete for the same limited pool. When employers document this shortage, ESDC grants the LMIAs that let them hire abroad.

Roles and realistic pay

  • Line cook: roughly $16–$20/hour depending on province and setting
  • Sous chef: roughly $20–$26/hour, often with accommodation support in resort settings
  • Executive chef / chef de cuisine: $55,000–$80,000+ annually in established operations
  • Institutional and camp cooks: steady hours, frequently with housing included

Employers must pay at least the prevailing wage for the role and region — that's an LMIA condition, not a courtesy.

What your application must prove

IRCC approves cooks whose paperwork proves real kitchen experience. That means reference letters on company letterhead stating position, dates, hours per week, and actual duties; culinary training certificates if you have them; and a resume that matches the offer. Photos of plated dishes are nice — verifiable employment history is what wins.

From kitchen to permanent residence

Cook (NOC 63200) is skilled work for immigration purposes. After a year in a Canadian kitchen you may qualify for the Canadian Experience Class, and provinces with hungry tourism sectors nominate cooks through their PNPs.
